Current process as of June 13th, you do not get a choice on selection of quarantine location (unless you apply for the home quarantine exemption). For general guideline on hotels, prices and options the list is attached below. Indications are there are significantly more hotels used for quarantine in Shanghai, so this should just be used for guidance. You will have to pay for the hotel/food on arrival/departure.
